Keto Chicken with Mushroom Sauce Recipe
One of my favorite meals, before we started eating healthier, was chicken cooked in cream of mushroom soup. Even before we started following a ketogenic diet, I gave up most processed foods like cream soups. Since then, I’ve missed Chicken & Mushroom Gravy even though I hate mushrooms. There is something so delicious about the mushroom gravy that I love, but as I’ve mentioned previously I hate mushrooms. I’ll pick out every single one. I don’t know why they gross me out so much, but I just cannot bite into a mushroom. In fact, my oldest daughter has to chop them up for me because they gross me out. Picky much? Yes, I will fully admit that I am a picky eater. It might be why most all of my recipes are so simple.
Anyway, I looked back at my Keto Green Bean Casserole Recipe for inspiration to make this recipe as I wanted a homemade mushroom gravy. I also wanted to make sure it was simple to make as I know that most don’t have time to spend hours in the kitchen prepping a meal, cooking, and cleaning. With that in mind, this Keto Chicken with Mushroom Sauce Recipeis a one-pan meal for easy clean-up. Simply pair with your favorite veggie or a big leafy green salad for a complete meal.

Directions for makingKeto Chicken with Mushroom Sauce Recipe
You can print the full recipe at the bottom of this post, but below you will find the visual tutorial on how I make this eays and delicious chicken with mushroom sauce. You can adjust as you desire with more or less mushrooms, but it is perfect just like this!
In 1 tablespoon of butter saute mushrooms, garlic, and onions for approx 6-7 minutes or until they are tender.
Remove the veggies from the skillet.
Sear both sides of chicken breasts in 1 tablespoon of butter.
Add the veggies back to the skillet.
Add all other ingredients then simmer on low/medium heat covered for 20 minutes. Then, remove the lid and add 1/2 tsp Xanthan Gumto thicken the sauce and continue to simmer with the lid off for approx 10 minutes or until sauce has reduced and chicken is done.

Instructions
Saute onion, garlic, and mushrooms in 1 tbsp butter in a cast iron skillet. approx 6 minutes or until they are cooked through.
Remove the veggies from pan and set aside.
Add 1 tbsp butter to the skillet then brown chicken breasts on both sides.
Add veggie mixture back to pan.
Add all other ingredients then simmer on medium-low for 20 minutes with lid on.
Remove lid and add 1/2 tsp xantamgum then simmer on medium/low until sauce thickens.
